Pét-nat (Pétillant-Naturel) translates to “natural sparkling” in French. The fruit were hand sorted to allow only the best to enter the press. This beautifully crafted sparkling wine offers a crisp acidity with a smooth roundness on the mid-palate. You may find peach, apricot and papaya notes with a graphite note on the finish.

After the Sauvignon blanc grapes were hand-picked and pressed, we stood by as the wild ferment naturally kicked in, bringing out the authentic character of the grapes. Starting notes of crisp green apple evolve to layers of candy apple and honeydew with hints of cherry on a long finish. Perfectly balanced, an initial bright acidity smooths out in the mid-palate and complements the flavors that follow. Easy-drinking, refreshing and layered, your tasting experience will build across your palate.

51% SAUVIGNON BLANC, 39% CHARDONNAY, 10% VIOGNIER

This Acacia blend consists of three wines, each contributing to the depth and complexity of this hand-crafted white blend. The Sauvignon Blanc grapes, from Temecula, were hand harvested from 47 year old vines and aged in neutral oak barrels. The Chardonnay, from Santa Barbara County, and Viognier, from Paso Robles, have both been aged in stainless rather than oak to contribute a lighter essence to the blend. In the aroma you will get a subtle earthy note with green apple and kiwi flavors on the pallet and finish.

The Chardonnay juice underwent a wild fermentation. Aged in stainless steel this Chardonnay brings a fresh yet well-rounded experience to the palate. The grapes used here are the exact same grapes used to produce our Chardonnay Reserve. However when it comes to the wine making technique we aged this wine in stainless steel rather than oak barrels – compare the two and taste the difference! This wine offers a very long finish – you will find a multitude of flavors layered and lingering on the palate. See if you find notes of orange blossom, dried fig, Christmas spice or clove.

This reserve is a blend of 75% oak aged Chardonnay and 25% stainless steel aged Chardonnay. Very well balanced, this wine showcases what chardonnay grapes can offer without the overwhelming buttery notes that are often found in a Californian Chardonnay. It was a fascinating journey analyzing the taste and aroma profile with our expert tasting panel – see if you find any of the following aromas or flavors; white peach, lime, key lime pie, pine, dried apricot and honey.

The Viognier juice underwent a wild fermentation. Aged in stainless steel this Viognier is ready to be enjoyed by itself or with food. This Viognier and the Viognier Reserve comes from the exact same vineyard -compare the two and experience the difference! Same grapes – different wine making practices. This wine offers an abundance of honeysuckle and floral notes mix with fruit. It’s a big wine, yet smooth and round with an almond and nougat finish.

2019 EL POMAR DISTRICT

AGED IN STAINLESS STEEL, WILD FERMENT, UNFINED

This 100% Viognier reserve is a wild ferment that consists of two parts. 85% were fermented on the white grape skins (also called ‘orange wine’). Note here that, as a standard practice, only red wines are fermented on the skins (because the skin holds the ‘red color’) – Viognier is a white grape. This was followed by 11 months aged in neutral oak. The other 15% has been fermented and aged in stainless steel. This is an extremely unique wine with notes of clove, ripe fig, peach, lycée, apricot and honey that comes through in the long finish.

This Rosé is made from 100% Syrah grapes, hand-picked two weeks before full ripeness to give it a bright acidity. Its delicate fruit notes were preserved by a carefully controlled cool-temperature fermentation, allowing the wine to take on a beautiful blush-rouge color. Through the tasting journey, flavors build with successive sips, cresting with mid-palate strawberry notes that build to a long finish of cream soda and cherry blossom. Well-balanced and well-rounded, a deserved companion for any occasion.

100% VARATIEL, UNFINED, UNFILTERED

ALC 10.1% BY VOL

Crafted with grapes hand-picked in two separate harvests from the same Grenache vineyard, this is a very unique wine. The first harvest offered us clear white juice, culminating in crisp acidity and delicate fruit flavors. The second harvest, three weeks later, offered a fuller and fruitier ruby-red juice yield. Here we fermented on the skins and aged in stainless steel. Combined – these two parts give us this very playful color in a refreshing, crisp wine with notes of red cherry, strawberry, and pink lady apple.

The Cinsault fruit were hand-harvested about 2 weeks before full ripeness to ensure a fresh acidity. During fermentation we kept the fermentation temperature low and as a result you will find a burst of cherry, strawberry and watermelon notes at the front (as it enters your mouth). At the back (or the finish) you will find a unique peppercorn note. Refreshing and easy drinking – it’s even more enjoyable in great company.

The Grenache and Cinsault fruit were hand-harvested for about 2 weeks before full ripeness to ensure a fresh acidity. During fermentation we kept the temperature low. This is to preserve and accent the delicate floral, light red fruit aromas and flavors these grapes have to offer. You may find guava on the nose and tropical passion fruit, floral and bubblegum notes on the mid-palate. Enjoy outside, inside, early or late; truly a wine for any occasion.

This light-bodied Grenache, underwent a wild fermentation – allowing the wine to graciously express its true sense of place. Hand-picked fruit, with 28 additional days of skin-contact after fermentation concluded, further reaped all color, flavor, aroma, and tannin benefits the grape skins had to offer. Aged in neutral oak French barrels, you’ll find a refreshing palate of smooth tannins that are completely satisfying on a sunny or cloudy day. While you sip – pick out, and enjoy specific notes of blackberry and dark cherry.

The Merlot fruit were hand harvested and kept on the skins for an additional 20 days after the fermentation completed. Aged in neutral oak french barrels for 12 months, you’ll experience a well-rounded tannin structure and a full body. Also look out for blackberry, cherry and chocolate notes as you are sipping away.

The Syrah fruit were hand harvested and kept on the skins for an additional 2 weeks after the fermentation completed. Aged in neutral oak french barrels for 12 months this wine offers the following delicious notes; raisins, fig spread, black cherry. dark chocolate rounded off with hints of tobacco and vanilla.

Wild Ferment:

Wild ferment is when we don’t add commercial yeast but rather let the native yeast, naturally occurring on the grape skins, do the job. This contributes to a sense of place that shines through the wine.

Unfined:

To fine a wine, you flush out certain elements, from that wine – essentially this means you guide the wine to what you want it to become. We believe this takes away from the characteristic aroma and flavor, the wine intends to showcase

Unfiltered:

Filtering help keep the wine clear – again you can lose delicate flavors and aromas. We skip this step to keep our wines as authentic as possible.
